Sometime back, I wrote about my success with creating close to perfect pasta like low carb alternative. Brandon asked me for the recipe. I don't really do hardcore recipe but this is a close second.
Start with taking the kojac noodles out of the bag and the fluid that it comes with. Rinse the faux pasta with cold water and some fresh lemon juice. Leave it to drain while you prepare the sauce and vegetables.
The sauce...
You can use alfredo sauce or tomato sauce as the base.
I always heat fresh onion (red), green onion and garlic(1-2 of each) with oil before I add either alfredo or tomato sauce.
If I want it spicy which I do, I add Ethiopian Chili powder to sauté with the tomatoes.
I add a pinch of the following spices:
- Cardamom powder
- Turmeric powder
- Black/white pepper
- Onion powder
- Salt
Then I reduce the hear to low and let it marinate for about 15 minutes.
Depending on what vegetables I have in the house, I will fry them in a stir fry style on a separate dish. My usual vegetables are mushrooms, celery, pepper and cabbage. The more colorful the dish, the better.
Once the vegetables and stew seem done (when the colors are darker than before) I proceed to the faux pasta. Depending on the brand, you may need to boil it in water to get the smell out. The ones I have been using lately have no smell so I skip this step.
I take the pasta and place it in the sauce that had been marinating. I turn the heat to low and add either pesto or fresh basil/cilantro.
I add the vegetables to the portion of pasta that I will eat and dig in.
