I had promised to share what I did when I wrote my summary on Oct 10th. The one I wanted to both document and improve on is the weight loss.
For someone with multiple conditions, navigating what is ok to eat and not losing you mind is hard.
The first thing I did was identify what foods work with all the conditions I have. I didn't want to have to second guess if something is allowed or not.
So I looked into the nutritional content of foods I like to eat.
Discarded some things that were clearly forbidden.
Added new things that I had to learn to change up and make it delicious.
Then I spent a lot of time looking at recipes and experimenting with the small list of ingredients I am allowed. Thank heavens spices and herbs were allowed. And butter.
I was able to create a handful of dishes that I can make and tasted delicious. I honestly didn't feel very deprived.
The number one focus was avoiding gluten. Many books I read about auto immune talked about gluten being a major problem. The other was dairy. I was sad to not have my heavy cream with my tea in the mornings but I replaced it with cacao butter. I also used clarified butted in my cooking which eliminates the problem causing element out of the butter.
The other major change was intermittent fasting. I ate just once a day. At around 3-4pm. It took some time to get used to. But it helped with repairing my body and with keeping the calories and carbs under control.
The first things I noticed were how insulin sensitive I was becoming. My daily needs went from 25 units a day to under 10. Adding walking and endurance exercise made that even less.
So watching what I was eating, fasting to just one meal a day and becoming more insulin sensitive did the trick for me. Despite thyroid issues, I was able to lose 21 pounds.
