Bacon and eggs

Bacon and eggs is one of those classic combinations that never goes out of style. It's like a powder blue shirt and khaki pants. And screw you Grammarly--I'm not changing "is" to "are." I'm talking about bacon and eggs combined together as one unit and not separate. The problem with AI, whether it's writing or driving, is that it doesn't know when to break the rules. But I digress.

Most mornings my breakfast is properly-made Bulletproof coffee. I grind the beans and use a French press to brew. I add grass-fed ghee and Brain Octane oil and blend it into a nice frothy mixture. In fact, I'm drinking some right now out of my Ember mug that keeps the temperature at exactly 139 degrees F.

But I did have bacon and eggs on my mind this morning. I would have whipped up a batch if I weren't out of Butcher Box bacon. I've got the pasture-raised eggs, which I found for the fair price of $3.99 at Trader Joe's. I prefer my eggs scrambled and the bacon crispy.

When I was a kid, I would toast up some white bread. The key is to butter the toast immediately after it pops up in the toaster. This method allows the butter to melt and soak into the toast and make it malleable. I would slice the toast in half and use a half-slice to cover the scrambled eggs, pinch down and pick up the eggs and eat the whole thing. See, the bread has to bend and stay intact for this to work. If the toast is too burnt or you didn't butter it fast enough, then the slice will break, and then you are just eating toast with scrambled eggs like a normal person. I seem to recall needing at least four to six slices of toast to scoop up all the scrambled eggs that my mom put on the plate. And don't forget an ice-cold glass of milk to wash it down.

Nowadays, in keeping with my general low-carb lifestyle, toast is off the list. I haven't found a suitable replacement, so I just eat my eggs with a fork. I also rarely drink milk because milk is a gateway food to bad eating. An ice-cold glass of milk goes perfectly with all the breakfast foods I want to eat but don't anymore. You know the ones: biscuits and gravy, pancakes, waffles, muffins, French toast, bagel loaded with cream cheese, etc. Good thing I'm drinking Bulletproof coffee and there's no milk in sight.

I actually love to eat eggs and more eggs when i'm not eating toast. I also will add in avocado and have a healthy fat + protein mix. Oh and i don't mind throwing some 
kimchi
 in there with the two

Ugh, egg + avocado + kimchi sounds divine. I wonder how much ox bile I'd need for that breakfast.
