ICE CREAM

Today im writing about ice cream. I decided this when I sat down to write, with a bowl next to me. Its delicious and chocolaty and everything it should be. It's also slowly melting.

I've been asking people a lot lately about ice cream, I feel like there is something weird about it, and because I usually have it in the hosue, and because there was an Atlantic article, and because its getting hot out. 

When I mention it to scientists they say things like its an emulsion and a foam at the same time, isn't that weird. No, well, I don't know, but its weird thats your first response to "do you like ice cream". I bring it up to normal people at work, and they ask have you tried to make your own? I don't know if its my friend group but a lot of people are making their own ice cream, or pretending to.

I used to, or I should say my parents used to. When I lived back at home, and maybe even when I was younger. My Dad had an ice cream maker inherited from his dad, and they would make it a lot. It's pretty much just a cold tub, that you can rotate, and you pour cream into it. On hot days I remember having to get ice. 

What I find strange lately, and more scientifically, is that ice cream has a weirdly low glycemic index. Which is a measure of how much a certain food effects your blood sugar. I know this depends on a lot of factors, but ice cream is weirdly low.  You can ask people about this, and they brush it off, say yeah but it has a lot of fat in it. But if you compare this to a croissant, whose glycemic index is very high it doesn't make sense, because they too have a lot of fat. 

There has to be something more to ice cream, chemically. Maybe the sugar is inaccesible? Its hard to say. The easy answer is its colder, but I don't think that matters. Or maybe it does, regardless there is something so nice about it. Eating it still now, can transport you to another place. Like in a garage on a hot summer day cranking a red metal drum in circles. 




ice cream
 is very dependent on its texture. If you allow it to melt you realize what it really is and it's not enjoyable.

It is weird, I wonder if melted would spike people's blood sugar the same amount.
