I have been away from writing for some time now for health reasons. I have been told I have multiple conditions - no need to go into those specifics. But I have been a type 1 diabetic for more than 2 decades. The new things I have been dealing with were brand new and needed me to make very dramatic changes.
Here is a peek at my diet restrictions(some are self-imposed):
1. Low carb
2. Low protein
3. Low sodium
4. Low potassium
5. Low iodine
6. Gluten-free
7. Dairy-free
8. Caffeine-free
9. No artificial sweetener of any kind.
Except low carb - everything else on the list is new.
I was very lost and confused at first just thinking about what I can eat that matches these requirements. But I am happy to report that this new phase has kicked my creativity and food experimentation to the max. I spend most of the day looking at food shows and learning how to make things taste good without the usual salt and msg overload.
It has been 2 months since I put this new diet into effect. I went a step further and became vegan. From keto doing heavy cream coffee a few times a day to full on vegan. Very dramatic changes but somehow, it wasn't that hard to make the changes as I had expected. I have adjusted and I feel good.
I did a few bloodwork recently and a lot of things have improved dramatically.
The best part is that I am using very little insulin. Though I am eating more and relatively more carbs in the form of vegetables.
My last a1c just came in and the doctor informed me that I am at 5.9%. That is a pre-diabetic range. In over 20 years of being diabetic, I don't remember being lower than a 6%. Beyond proud at that achievement. This was one of a series of good news at the doctors office lately. Looks like a lot of the things I am doing are paying off. Particularly avoiding stress. The American way of life is packed with stress and this is the first time in a while that I deliberately took time to work on reducing stress. And I am reaping the benefits.
Maybe one day, I will have a project - How I reversed all my conditions and share it with the world.
