The last 2 months, I started to experiment with new recipes. I wanted to see if I can create meals that were healthy and delicious so I didn't feel like I was being deprived. I have read enough books that state that in order to maintain a habit, it needs to not evoke pain and misery.
So I started with the usual healthy group - vegetables. I tried to taste a variety of them to find what I like. I tried cooking them in different forms to see what I enjoy. I tried cuisines from around the world and even invested time to learn more Ethiopian dishes. Since we have a lot of vegan dishes, I was able to pick up many protein alternatives. I bought a couple of gadgets to make things easier to do.
Lunch and dinner were relatively easy after a few weeks of trying different things. I was a bit lost when it came to breakfast. Since I couldn't eat eggs, meat or carbs like oatmeal and cereal - I didn't have much left. I considered skipping it to maintain at least 14 hours of fasting but decided against it. Fasting and other similar difficult things would not be part of this first phase.
After a few hours on the food network and some googling, I discovered low carb gluten free vegetable tortillas. I got me a quesadilla machine and tried a few different options for fillings. It was a delicious breakfast option. The carbs remained below 15g and the work was less than 10 minutes. So I was happy.
Such similar experiments have made me feel like I really enjoy this type of cooking. Given many constraints, how difficult is it to come up with delicious and healthy dishes to maintain my current diet. I have started to think that I want to take my cooking skills to the next level. Maybe read a few books and shop at the famers market to discover new ingredients. My favorite part is finding new herbs and spices that I can find and use to add to my food so I can replace it for sodium/salt.

As in if the world says only x is possible with y and z.
creativity is what allows you to say nah. if you do this then y becomes abc and then you can have this other thing. and so on and so on.
Creativity is what allowed people to not have to rely solely on rain for agriculture.
